West Coast Quesadillas

2 Fast Classics Fire Roasted Chicken Breasts, sliced
4 large flour tortillas (12 inch)
1 c. Monterey jack cheese, shredded
1 c. guacamole
¼ c. ripe olives, sliced
¼ c. pickled jalapeno slices
Non-stick cooking spray
Sour cream, optional
Salsa, optional

Spray one side of a tortilla lightly with vegetabe oil and place onto a non-stick skillet over medium-high heat. Sprinkle ¼ cup cheese evenly over tortilla. Evenly distribute one half of the remaining ingredients on the tortilla, top with the remaining ¼ cup cheese and the second tortilla. Spray with vegetable oil. Cook on each side until cheese melts and ingredients are hot throughout (about 4 to 5 minutes per side). Repeat with the remaining tortillas and ingredients. Cut into wedges. Serve with sour cream and salsa, if desired.
